Avocado Chocolate Pudding is a Keto Sweet Treat

I love this avocado chocolate pudding and I hope you do too. Containing lots of healthy fats from the coconut cream and the avocado. Suitable for Vegans and people aiming for ketosis, it’s a keto sweet treat! 1

These ingredients have low carbs, and high fats, and are completely animal-free.

Enjoy it as a satisfying and filling treat after dinner! You don’t need much, but why not indulge a little.

If you’re having guests around, remember to prepare it in advance. This recipe is best refrigerated overnight. I’d suggest a minimum of 5 hours to allow the pudding to set.

As a sweet alternative, you could choose to eat this avocado chocolate pudding for breakfast. It will certainly make you feel full all morning. So, let’s get into it!

Avocado Chocolate Pudding Recipe

Servings

6 portions

Time frame

Preparation – 25 minutes
Setting – 5 hours

Ingredients

Chocolate, Almond and Avocado Pudding
  • 3 cups almond milk
  • 1 cup coconut cream
  • 6 Tbs granulated stevia or erythritol blends
  • 2 medium avocados – skinned
  • 6 Tbs unsweetened cocoa powder
  • 2 tsp vanilla extract
  • 2 tsp almond extract

Topping

  • Desiccated Coconut (optional)
  • Pistachios (optional)

You will also need

  • A blender
  • Measuring cups and spoons
  • Cups or Glasses for serving
  • A spatula or wooden spoon

Method

  1. Place all the ingredients into a blender and mix on high.
  2. Scraping down the sides of the blender if needed.
  3. Blend until the mixture has an even and smooth consistency.
  4. Pour the mixture into cups or glasses and cover.
  5. Refrigerate overnight or a minimum of 5 hours.

Serving

Add the desiccated coconut and pistachio as desired as a topping for your keto sweet treat before serving.

Do you need a little extra protein or sustenance? This will pull your avocado chocolate pudding away from keto though…

Whip the coconut cream separately and add some chia seeds. Do not blend the chia seeds. Blend the other ingredients until smooth.

Stir or layer the chia seeds and coconut cream mixture through the avocado pudding mixture. This will also give the pudding a dynamic finish.

Even though they aren’t keto freindly, chia Seeds are slow-burning and highly nutritious. Be mindful not to add too many Chia Seeds as they do absorb quite a bit of moisture and expand.

Did you know that chia seeds are a powerful source of vitamins and minerals that support a healthy gut?

There are so many neat ideas when it comes to serving this lovely pudding. As one idea, you could allow the mixture to set in a bowl. Then add the mixture into a piping bag.

Pipe the mixture into some clear cups or glasses to give it an interesting finish. Top with crushed nuts or desiccated coconut.

Here’s another neat idea when serving up the your avocado chocolate pudding. Create layers of mousse with light and dark mousses.

Separate the pudding into two. In one batch add a little extra cocoa to make the mixture darker. Then layer the different colored mousse to create an eye catching effect.
