Cucumber and Avocado Soup has quickly become my favorite go-to Vegan soup recipe. Throw the chopped onions, garlic, cucumber, and vegetable stock into a saucepan.
Once cooked add the cucumber stock, avocado, Sea Moss, Salt and Pepper into a blender and whiz. It literally takes about 10 minutes to cook. Everybody that I cook this for absolutely loves it. Give it a try. I’m confident that you will too.
Honestly, I cannot remember where I got this recipe for Cucumber and Avocado Soup. But thank you so much to whoever it was. It’s super quick to prepare, tasty and nutritious.
Admittedly, when I first heard about the idea of eating Cucumber and Avocado Soup, I thought it would be awful. The idea of hot cucumber and avocado really did not gel with me.
But, I am now a raving fan. You may choose to have this soup hot or cold. We live in Melbourne, which for me isn’t exactly warm weather, so I don’t tend to eat if cold. But there is that option if you’re into that.
Cucumber and Avocado Vegan Soup Recipe

Ingredients
- 1 Onion
- 1 Tsp Crushed Garlic
- 1 Liter of Vegetable Stock
- 2 Large Cucumbers
- 1 Medium Avocado
- 6 Tbsp Sea Moss Gold
- Salt and Pepper to taste
You will also need
- A blender
- Measuring cups and spoons
- Wooden spoon
- Chopping board
- Sharp knife
- Soup bowls for serving
- A spatula or wooden spoon
- Large saucepan
Method
- Sauté the garlic and onions with a small amount of vegetable stock (or oil if you prefer) until they become translucent.
- Add the remaining Vegetable Stock to the pot and allow it to heat.
- Chop the cucumber into chunks.
- Add Sea Moss gel, avocado, and cucumber broth into a blender and mix on high.
Serving
Season with salt and pepper before serving. Chop up some bread and make croutons or serve with a slice or two of yummy garlic bread. Honestly, it’s divine. Yes, I’m serious, it’s that simple.
Pro Tips:
The smaller you cut your cucumber. the quicker it will cook. So, if you’re in a rush then you could potentially whip this up in under 20 minutes.
